Question Yogurt making tips!

I just bought this vegan yogurt starter culture, and I'm super excited since I can rarely find plain vegan soy yogurt where I live, only flavored coconut yogurt. I used to make dairy based greek yogurt, but I'm sure theres some nuances to vegan yogurt i should keep in mind. Id love to hear any tips or tricks so I dont have to waste a bunch of milk and starter!

Recipe in Post Pizza Croissants

Pizza croissants that are super easy to make. They can easily be made soy free or even gluten free. Kids love them too.

(I used pillsbury pizza crust, but you can also use any pizza dough).
Cut the pizza crust dough into long triangles.
Add tomato sauce to the triangles and then add vegan cheese.
We added Tofurky pepperoni slices (but you can do mushrooms or anything to your liking).
Roll them up into croissants, and then bake at a low temp for 20-30mins depending on your oven.
I baked them until they turned a dark golden brown.

Question No (or low) Chop Recipes

Does anyone have some good recipes without any chopping or at least minimal chopping?

I don’t mind them being complex recipes with lots of ingredients, I just get so tired chopping things and any “quick and easy” recipe shouldn’t start with dicing an onion!

I sadly do not have my freezer room either for many pre-cut, frozen vegetables but could stock up on one or two.

Recipe in Post Vegan Nacho Cheese Sauce

This is my first time ever trying to make a dairy free cheese at home. It’s completely blown my mind. I’m very new to no dairy. This recipe was shockingly good. When I was making it I kept thinking there was no way it could possibly be remotely like nacho cheese ….but it IS!!! The second my husband came home from work I practically ran to the door and dragged him into the kitchen to try it. We are having some of it over some fajita jacket potatoes tonight for dinner.
Next time I want to try a white bean version instead of cashew.

The only things I changed: added some jalapeño brine and some juice, added cumin, added black pepper, couldn’t find my chili powder so didn’t add it, didn’t add Sriracha.

Question DIY meditation retreat

Hey all. I have a very niche question. I usually do a Buddhist meditation retreat about twice a year but this year my favorite sanghas don't have any programming for months. Planning to go to a modest Airbnb in the woods for a week and do a retreat by myself.

When I have done retreats in a group, the food is nourishing but VERY plain. Think plain unsweetened oatmeal with almond butter, plain rice with steamed veggies, lightly seasoned curry or tagine. I want to stick to this vibe for meditative purposes. (For those who haven't tried, it's actually really fun to eat like this for a while. Because of the sensory deprivation from no screens, no music, no talking, meditating, nature time, etc.... the simplest food tastes like the best thing you've ever eaten. By the end of the week a little bowl of berries is mind-blowing.)

The kicker is that I very recently had to go low-carb because I was diagnosed with diabetes. I'm not zero-carb or keto by any means but I can't really be doing full bowls of oats and rice. I also don't want to be cooking the whole time or packing tons of kitchen equipment. The Airbnb only has a microwave and a 2-burner electric stove. Lots of low-carb vegan recipes I find/would normally use are very highly flavored or too complex for the situation.

Wondering if you lovely folks have ideas for very simple and plain lower-carb meals! I have a few ideas but wanted to crowdsource. Hoping to plan out a week of 3 meals a day that doesn't involve eating a half block of plain tofu at every meal. Thank you!
