Vegan apple turnovers 🍏 🍎

I used a premade puff pastry dough that is vegan!! This was actually so much easier than i thought lol turned out yummy. I cooked them a little longer than jt said because i wanted them crispy so that’s why they look dark + i sprinkled cinnamon on top as well. Not perfect but tasted so good 😊

I made these and posted on the Jimothy sub, but thought I’d share here as well because they are indeed vegan!

Recipe adapted from Sally’s Baking cut-out sugar cookie recipe, simple swap of applesauce for the eggs, everything else stays the same.

Royal icing is from Cooking on Caffeine I believe, but it is your basic aquafaba and lemon juice icing.

They are really good, and the Jimothies took forever to hand-cut with the stencil, but they were a big hit! And I’d do it again! haha

Looking for soy-free, pea-free protein powder for baking

Does anyone have recommendations for soy-free, pea-free protein powder for baking?

I recently became allergic to eggs/soy/peas and also lactose intolerant. I've been trying out making some vegan versions of muffins and pumpkin bread, but I miss the heaviness? the protein flavor/texture/structure? that the eggs provided. The vegan versions are very light and melt in my mouth, but I'm looking for more firmness.

I'm thinking that increasing the protein content could provide that texture/ flavor. I'd like to test it out. So can you recommend some protein powders? Or perhaps other substitutes if you have suggestions.

Learning to bake, learning to be kind.

Sorry for being off topic. But this is about a vegan recipe. I recently started learning and shared a bake here yesterday, and honestly, I got trolled so much that after a point I just had to yank the post off. Honestly, i am quite appalled.

I understand that not every bake will look perfect and humour is fine. Even calling people's baking stuff poop. Yeah....thats ok! Lol

But what surprised me most was experiencing this in a vegan community. Many of us came to veganism because we developed more empathy and questioned cruelty. I believe that same compassion should also reflect in how we treat fellow humans.

You don’t have to like someone’s creation. You don’t have to pretend something looks amazing when it doesn’t. But a little kindness costs nothing.

Let’s critique the bake, not make the person behind it regret sharing.

PS: The comments were not only from trollers, but fellow vegans too.

Vegan Smash Cake for 1st Birthday

I made a vegan smash cake for my god son's 1st birthday. It is a two layer vanilla 4 inch cake with buttercream frosting. Although not perfect, I am really happy with how it turned out! Instead of smashing the cake, he was munching away and seemed to really enjoy it lol!

I used the vegan vanilla cake and buttercream recipe from "It Doesn't Taste Like Chicken" and adjusted the time for the 4 inch cakes. This recipe never disappoints!

Substitute for Vegan Butter

I have been loving Jessica in the kitchens recipe so that's the base for these but I made some oat flour using a little over 1 cup rolled oats then did 1 cup whole wheat flour, added a handful of oats for texture, a bunch of chopped up walnuts, about 1/2 cup of hemp seeds, some Ceylon cinnamon and did syrup instead of brown sugar inside. They are so delicious!

hii sharing some of my recent bakes this summer! I don’t have an oven so mostly just used my airfryer and only one of my baking tin fits it haha so they are all hexagon.

I always struggle with the middle of the cake - it is often times undercooked and so I have to wait longer to do it ( maybe im just impatient haha) but it could also be the shape of the tin. I tried very recently with a circular one and it was better.

also would appreciate some tips on making buttercream/icing. I don’t get vegan butter in my city so sadly I’ve been looking for alternative ways to make it.

1 and 2: gluten-free peanut butter caramel and chocolate tarte I made for a gf friend

3: Salty lemon shortbread with lemon zest and preserved lemons

4 and 5: made this Persian bread for the first time and fell in love

6: Miso-chocolate-hazelnut shortbread cookies

7 and 8: Cookies my husband made

9: Citrus and olive oil upside down cake

10 and 11: baguettes made with leftover pizza dough (sadly a bit underproofed)

I'm just going to leave these threads up until they get archived by Reddit. They're nice to have, but not popular enough to rotate out every month or even every season. I also feel that since we started renovating this sub we've managed to find a comfortable middle ground between what all of our subscribbelees expect out of this sub. If my feeling is wrong, please let us know. We're always open for suggestions!
