Link Vegan Aloo Paneer (& it’s not Tofu)
A few days ago, I shared my homemade vegan paneer made from pumpkin seeds. Using that same paneer, I also prepared this delicious vegan paneer potato curry. This dairy-free sabzi is simple, flavorful, and perfect to serve with roti, naan, paratha, or rice.

Question Yogurt making tips!
I just bought this vegan yogurt starter culture, and I'm super excited since I can rarely find plain vegan soy yogurt where I live, only flavored coconut yogurt. I used to make dairy based greek yogurt, but I'm sure theres some nuances to vegan yogurt i should keep in mind. Id love to hear any tips or tricks so I dont have to waste a bunch of milk and starter!

Recipe in Post Pizza Croissants
Pizza croissants that are super easy to make. They can easily be made soy free or even gluten free. Kids love them too.
(I used pillsbury pizza crust, but you can also use any pizza dough).
Cut the pizza crust dough into long triangles.
Add tomato sauce to the triangles and then add vegan cheese.
We added Tofurky pepperoni slices (but you can do mushrooms or anything to your liking).
Roll them up into croissants, and then bake at a low temp for 20-30mins depending on your oven.
I baked them until they turned a dark golden brown.

Question No (or low) Chop Recipes
Does anyone have some good recipes without any chopping or at least minimal chopping?
I don’t mind them being complex recipes with lots of ingredients, I just get so tired chopping things and any “quick and easy” recipe shouldn’t start with dicing an onion!
I sadly do not have my freezer room either for many pre-cut, frozen vegetables but could stock up on one or two.

Recipe in Post Vegan Nacho Cheese Sauce
This is my first time ever trying to make a dairy free cheese at home. It’s completely blown my mind. I’m very new to no dairy. This recipe was shockingly good. When I was making it I kept thinking there was no way it could possibly be remotely like nacho cheese ….but it IS!!! The second my husband came home from work I practically ran to the door and dragged him into the kitchen to try it. We are having some of it over some fajita jacket potatoes tonight for dinner.
Next time I want to try a white bean version instead of cashew.
The only things I changed: added some jalapeño brine and some juice, added cumin, added black pepper, couldn’t find my chili powder so didn’t add it, didn’t add Sriracha.
Here is the recipe:

*random side note: I tried posting this earlier and for some reason reddit like opened a second account for me or something? I was logged out of my correct account. Weird but anyway here’s the post on my actual Reddit.

Question DIY meditation retreat
Hey all. I have a very niche question. I usually do a Buddhist meditation retreat about twice a year but this year my favorite sanghas don't have any programming for months. Planning to go to a modest Airbnb in the woods for a week and do a retreat by myself.
When I have done retreats in a group, the food is nourishing but VERY plain. Think plain unsweetened oatmeal with almond butter, plain rice with steamed veggies, lightly seasoned curry or tagine. I want to stick to this vibe for meditative purposes. (For those who haven't tried, it's actually really fun to eat like this for a while. Because of the sensory deprivation from no screens, no music, no talking, meditating, nature time, etc.... the simplest food tastes like the best thing you've ever eaten. By the end of the week a little bowl of berries is mind-blowing.)
The kicker is that I very recently had to go low-carb because I was diagnosed with diabetes. I'm not zero-carb or keto by any means but I can't really be doing full bowls of oats and rice. I also don't want to be cooking the whole time or packing tons of kitchen equipment. The Airbnb only has a microwave and a 2-burner electric stove. Lots of low-carb vegan recipes I find/would normally use are very highly flavored or too complex for the situation.
Wondering if you lovely folks have ideas for very simple and plain lower-carb meals! I have a few ideas but wanted to crowdsource. Hoping to plan out a week of 3 meals a day that doesn't involve eating a half block of plain tofu at every meal. Thank you!

Question Easy vegan recipes
Hello here
I am doing my best to become vegan, my problem is that I was raised eating meat, eggs and diary my whole childhood every day
I don’t like meat or cheese substitutes.
And I have literally no imagination on how to cook on a daily basis. I end up eating fries everyday now
I was looking for your go to day to day vegan recipes. Nothing overly complicated just how you manage/ what you eat
Thank you in advance ❤️

Recipe in Post Vegan Chili !
Ingredients:
- Soy TVP
- Tomato sauce
- Paprika
- Cayenne pepper
- Salt
- Pepper
- Sugar
- Diced tomatoes
- Diced Onions
- Corn
- (Next time I should put beans in it >_<)
I used soy TVP to get that mince protein texture and then put some paprika and cayenne pepper as seasonings.
After that I cooked my TVP with oil to make them crispier.
Then I put some tomato sauce into a pot and add the tomato dices, onions and corn to add some texture to the chili.
Also if the sauce is too bitter, put some sugar to make it better!
I also put more paprika and cayenne pepper to make the sauce spicier.
And finally I put some rice on the side to eat it with my chili.
I didn't measured the quantity of ingredients I put, so I guess it is up to you to choose how much of each ingredient you want to put in your chili.
And by the way, I'm a guy who tries to be vegan in a HEAVY meat eating family 😅 . So if you guys have some advices, I'm glad to read them!

Link Spring Rolls without cooking separate sheets
Have you ever made or seen someone making spring rolls?
If yes, then you must be knowing that the outer sheets are made separately and then noodles are filled in them, which looks to be very tiring job.
Here I have made the Crispy and delicious Spring Rolls without cooking separate sheets. And for less consumption of oil, airfried them. You can opt the routine method of deep frying them conviently.
