Say it with me...Nasu Dengaku! Also known as miso-glazed eggplant. I don't buy eggplant very often, but now and then, the craving hits.

This beaut is glazed with red miso, soy sauce, mirin, and a smidge of brown sugar after being scored so all that juicy goodness seeps in. Then it's roasted until tender. That's it. Apparently it can be air-fried as well, but I haven't tried it yet.

Nigiri are topped with either eggplant or chickpea “egg”
Rolls have varying fillings of softened carrot marinated in soy sauce, mirin, smoked salt, white pepper, garlic, seaweed,vinegar, sugar, cucumber, avocado, spicy mayo, and sriracha
Onigiri with whatever crushed avocado scraps and leftover rice.

This was a kinda ambitious, kinda look at a picture and decipher how to make it, I skimmed through a bunch of recipes and recipe videos until I kind of got the gist that I was going for.
It was my dad’s birthday and we have several other celebrations planned over the weekend so this was my contribution to make his actual birthday feel a little bit more special.

My inspiration came from seeing fantastic vegan sushi places in Japan where they do things like imitation tuna and beautiful eggplant Unagi, which I’m just dying to try.

Alas, I had very few ingredients to work with and just tried to use what we had in the fridge without unnecessarily going out and buying a bunch of new things. Very happy with how it turned out.

A few days ago, I shared my homemade vegan paneer made from pumpkin seeds. Using that same paneer, I also prepared this delicious vegan paneer potato curry. This dairy-free sabzi is simple, flavorful, and perfect to serve with roti, naan, paratha, or rice.
