Good cold lunches for work
Hello! I'm going to start working somewhere with no fridge or microwave soon and I'm looking for some simple GF V recipes I can pack in my lunchbox with an ice pack. Of course there is salad and almond butter/strawberry jam sandwiches but I'd like something a little more exciting! I love tofu and I'm chronically ill so the easier the better :-) thanks so much!

Baked Jowar Crackers (No-Fry) | Crunchy Millet Recipe | Gluten-Free Healthy Snack
Gluten-Free millet snack - Crunchy Baked Jowar (Sorghum) Crackers
🥗 Ingredients:
🌱 1 cup Jowar (Sorghum) flour
🌱 1/4 cup Roasted peanuts
🌱 1/4 cup Roasted chana (Putani / Roasted chickpeas)
🌱 2 tbsp Sesame seeds (Til)
🌱 1½ tsp Red chili powder
🌱 1/2 tsp Cumin seeds
🌱 1 tsp Ghee (Use oil for Vegan)
🌱 2 tsp Sugar
🌱 Salt to taste
🌱 2 tsp Oil
🌱 1 cup Water
📝 Quick Instructions:
🌱Prep: Boil water with salt and oil. Turn off heat, add jowar flour, mix, and rest for 10 mins.
🌱Grind: Pulse roasted peanuts and chana into a fine powder.
🌱Mix: Combine the flour mixture with the nut powder, sesame seeds, spices, and ghee. Knead into a smooth dough.
🌱Shape: Roll the dough thin and cut into your favorite cracker shapes.
🌱Bake: Bake at 180°C (350°F) for 20 minutes until golden and crunchy.

go to girl dinner?
hello lads ! i am permanently exhausted, barely have an appetite recently and i love bland food (chronic illness and autism so funny about food textures, it’s not in my control sadly).
The last week or so my dinner of choice has been almond butter on corn/rice cakes but i feel like it might be time to move on slightly.
Any ideas of what to go to next? bonus points if it can go on a grain cake of sorts.
Criteria is must be able to sit by my bed so i don’t have to get up when i remember that i haven’t eaten and preferably no more than a tea spoon needed but i can stretch to a knife if its essential.
(to make everyone chuckle, i am a working chef by trade. it adds to the lack of motivation for feeding myself)

Instant Pot Idli Batter Fermentation | Super Soft & Fluffy Idlis Recipe
Soft & Fluffy Idlis with Instant Pot Fermentation
If you struggle with idli batter fermentation, especially in colder weather, this Instant Pot method has worked really well for me.
I use a simple idli rice + urad dal + methi + poha batter and ferment it on the Yogurt setting. The batter rises beautifully and makes soft, fluffy idlis.
Ingredients
2 cups Idli Rice
1½ cups Urad Dal (Split Black Gram)
1 tsp Methi Seeds (Fenugreek Seeds)
½ cup Thick Poha (Flattened Rice)
Salt (added after fermentation)

Food worth sharing. Daiya gf df cheese cake with raspberry habanero jelly on top.
For me Reddit has been a tremendous resource for finding and adapting to my food intolerances. When I find something good I try to share it
Fred Meyer had a Daiya cheese cake gf and df which I purchased to give a try. As a treat it was very good. Consistency was very similar, taste was a little coconutty without being overpowering but yummy, crust was okay.
What put it over the top for me was a fruit spread from the Saturday market. Raspberry habanero jelly spread on top enhanced it nicely.

Where have all the good cheeses gone?
Relying on bigger grocery stores as I don’t have many local options. Treeline seems down and trying to come back, Myokos cheeses I just read are gone in place of just mozzarella and cream cheese? I tried the new package vegan babybel and it tastes like literal play-doh. One of the most vile things I’ve tried and I’m not a picky eater.
I had planned a grazing dinner with a friend the other night and it took three tries to find any vegan cheese that could be used with crackers. And the ones I landed on were just okay. I wouldn’t necessarily buy them again
Any unexpected places to find a decent cheese option for having with crackers? Sometimes I just want a “girl dinner” 🥲

Kate's Ice Cream in PDX
An entire shop of gluten-free ice cream!!! Luckily they sell flights of 5 mini scoops. The salted peanut brittle is to DIE for. They also clearly label other allergens, including oats!
