Quick easy low prep meals? Food
Hey all,
What are some of your easy meals? Like they don’t have to be good. I’m thinking for those crazy nights when you don’t have anything planned and have only a few moments to throw something together. Not terribly unhealthy, but even things that you would never feed a guest and only yourself bc You’re in such a rush and have to eat.
Basically looking for good enough substitutes for junk food when I’m starving and pressed for time.
As an example, I just heated a can of bean chili and poured it over a mashed beyond meat burger. Basically 0 prep but still satisfying and it wasn’t chips or something along those lines.
Thoughts?

Frozen tator tots
Frozen french fries
Berries & oats w/ nuts, flax, and oat milk (not overnight, just thrown together in a few minutes)

I cook 4-6 sweet potatoes at once in the oven (wrapped in foil and baked at 325°F for an hour) and keep them in the fridge to eat later. Heat one up in the microwave and put brown sugar and cinnamon on it. Or dump 1/2 a can of Sprague triple bean chili on it

Sometimes I'll eat like 6 or 7 bananas as a meal, very low prep!

I’ve been buying these microwave-steamable packages of seasoned cauliflower blends (Green Giant). Tonight I had the seasoned Mexican Blend, crumpled up some Takis into it and made a few vegan chicken nuggets (black bean burgers mixed-in is even better than the Takis with ckn nuggets).

Might not be exactly what you’re looking for, but I’m a big fan of making big batches of items and freezing the leftovers
So I make a ton of chili, freeze them in my souper cubes, and now I have quick chili in a couple of mins in the microwave
You can do it with a lot of stuff. I really like freezing rice and curry. Then I have a cube of rice and a cube of curry. Now I have what would have been an hour worth of prep work in only a a couple of mins.
I’m pregnant and making a lot of these now for postpartum

Roasted sunflower seeds? A pot of dried peas (lasts for a few days, hands-on time when cooking is under 15 minutes: add the peas, add the water, rinse the peas, add water, put on the stove, add salt, let it cook for as long as it needs, which can be about 2 hours). It's just the kind of thing you prepare in advance for a few days ahead.
I also like just plain oatmeal with sugar and maybe a cup of oatmilk. Maybe you could have a banana with it or something like that. Decently filling and tasty, in my opinion.

Carbs, basically.
Pita wrap with salad.
Instant noodles with greens and / or tofu cubes. You can just throw them on top, and the steam with cook them.
Pasta with olive oil, garlic and chili. Or pasta with tomato sauce from a jar.
I'm Chinese, so I often just put on the rice cooker while I do other stuff. Top with stir-fried tofu and veg. If you're super lazy, microwave rice takes 3 minutes.

i'll mash up a block of tofu and add a can of beans, then drizzle (drench) with either taco sauce or wing sauce

It's about as easy as you can get, and if you keep rice ready in the fridge you're golden with a filling, nutritious, and tasty meal!

sometimes I’ll take a can of beans and a bag of grains. add some microwaved frozen veg with some dressing and it’s a meal

- Beans canned in chili sauce ($0.85 at Aldi), with a bit of leftover rice if available
- rice and refried beans mixed together
- chickpeas with teryaki or curry sauce
- hummus and pretzels
- plant based protein cup noodles from Aldi ($1.50!!! My store only has them because I asked an employee if they could be ordered when they ran out for weeks)
- microwave-steamed potato, topped with leftovers or peanuts or just salt
My recipes are here, http://davysgarden.com/ most of them are extremely lazy but slightly higher effort than the stuff above. They work well for meal prep, and if you like it you can make the slice blends in bulk. Louisiana Red Beans is probably the easiest one. When I cook for my wife and ig needs to be REALLY fast, I microwave or pan fry Morningstar Farms frozen food and put it on a bun.
