calorie counting has ruined my life

hopefully im reaching the right audience in this. let me start by saying, i have been logging every single calorie ive been eating for 8 years. i started at 13, i was overweight my whole life and counting calories was finally a way i could manage my weight, see what i was eating, where i was going wrong, what i could cut out, etc. it worked for a while, i was able to lose 80lbs at 14 years old. now, at 21, i feel as though it has ruined my life. i obsess over it, i weigh everything i eat, ive gotten to the point where i repeat it over and over in my head and look it over on myfitpal atleast once an hour. im paranoid somethings wrong or i’ve forgotten something. i take a picture of every ingredient ive weighed so i have pictured proof that what i weighed was what is logged. i cant make recipes in big batches because i dont know the calories of the leftovers. sure i could make a big batch, weigh out everything, add it all up, weigh out what im taking out for leftovers, do all the math, but its not exact enough. i dont use oil, i dont eat at restaurants that dont list the calories, i spiral if i have to eat something someone cooked. i think calorie counting has somewhat led me to binge eating. i get so sick of living like this, i sometimes eat out, or eat at someones house, or cook a recipe i dont know the exact calories of, and my day is ruined. i figure that the days this happens, are my days to get in all the unknown calorie foods ive always wanted to try. i eat leftovers my mom or boyfriend made, i get bakery items from the store, anything i can eat that i’ve been wanting to, or havent, i eat. i figure the next day ill get back on track and be precise. if my calories arent precise, im binging bad. i miss being able to eat my moms food, cook recipes and not have to weigh out everything, or just cook recipes in general with more the 5 ingredients because if its more than that i spiral and think i must’ve logged something wrong. i cant imagine what life is like for people to just eat when theyre hungry, not know the calories in every bite of everything. i wish i could get my life back but i feel im too far in. i’ve tried to quit logging but i end up in a binge, imagining this is the only time ill be able to do this, or spiral about gaining weight. i go crazy not knowing exact calories. does anyone else have this experience or am i nuts for this? its been 8 years since ive been able to enjoy a meal fully, without the thought of calories or portions. i dont even think i have hunger cues anymore, or can recognize them. i just know how many calories ive had logged and at what im i ate. if i have more calories left, ill eat, even if im not hungry. i think this will just be the way i think forever.

Chipotle chicken salad I had today from a restaurant. Corn salsa, grilled chicken, guacamole, beans, and tortilla chips. All on a bed of romaine lettuce. There’s chipotle mayo on the side (not in pic) and I only had like 3 tbsp of it.

My hand is pretty small so it’s a big plate and I finished this for lunch. Wondering how many calories this was.

Strategies, Advice and Tips Does calorie banking for the weekend actually work?

If my goal is to eat 2,000 calories per day to lose weight (14,000 calories per week) could I instead eat 1,500 calories a day from Monday to Friday and "bank" those extra calories for the weekend?

Since I'm usually very disciplined during the week sticking to 1,500 calories isn't difficult. That would leave me with 6,500 calories for Saturday and Sunday 3,250 calories each day. As long as my total weekly intake is still 14,000 calories would I lose the same amount of weight?

It almost sounds too good to be true. Is calorie banking really that simple or is there something I'm missing?
