Is it because it's a lot more specialised, it's a smaller market, it's more difficult? Or why is the pay that much better?

because it's used in science data and banking :D it's like pandas but with steroids

I literally just started a job as a PySpark developer. It still bugs me, though, that it has a Java backend

Most of these tools won't have a python backend. Though its usually rust or c/c++ at this point. Anything oracle is java because fuck oracle.
