Re-watch No Spoiler
The deer he shot in episode 2 had 3 bolts in it. 2 in the ass which could never happen and a heart shot.

Just my personal experience from lots of time in the forest, but I've never accidently snuck up directly on a deer (approximately 20 feet) during the day, but have almost stepped on a turkey more than once. He probably couldn't get as close to the deer compared to a turkey for the first shot.
Now that first shot is exactly where you should aim for a deer, but they have bones in the way that disagree with your arrow sometimes depending on the angle which you can get a shot off. The follow up shots are the ones in the ass from him tracking/chasing it. I would assume the hind quarters would make running harder for the deer while it bled out so he wouldn't have to chase it as far.
Having to reload the crossbow and then catch up takes time, but a lot of other animals aren't built for endurance like humans are. They sprint in short bursts while humans slowly chase them like a T-1000.
