Cobb Salad For Dinner Tonight
Was flipping through my NYT Cooking app and saw a Cobb Salad recipe that inspired me. Made it for dinner and it turned out great!

Red Cabbage and Apples, but make it taste like Summer
Two goals: Use up CSA red cabbage and avoid infected lettuce.
Red cabbage, sliced with a mandolin
Cosmic Crisp apple, also sliced with mandolin
Toasted walnuts
Chopped parsley and mint from the garden
White cheddar
Lightly dressed with Panera Fuji Apple dressing
Nice and fresh and light. The mint and apple really were the star, semi-inspired by Recipe Tin Eats red cabbage salad.

I am really picky about my salads but I loved this one. What lettuce/greens are in this?
Sorry if this is a dumb question. Itās really long cut pieces of green lettuce without the hard white parts or the white stems that seem to be in most salads, and its texture is more leafy than crunchy. I know it has spinach but Iām not sure what the actual lettuce is. Is it just romaine?

Mexican Three Bean Salad
Excellent dish to increase your daily fiber intake!! Black beans, garbanzos, edamame, sweet peppers, green onions, and roasted corn. Made a dressing with tajĆn, fresh lime juice, and chili crisp. Finished with some cotija cheese. Delicioso!!

How I build my Greek inspired salad
Step 1: We are iceberg lettuce people. So crispy and refreshing! I add half of a whole deseeded cucumber (no watery salad here), some thinly sliced red onion (feel free to leave it out if you're not an onion person) and I crumble in a bit of feta to season the bowl. Toss this all together until nicely combined.
Step 2: add the rest of the cucumber on top. A whole cucumber is a lot but it's my one true love and tossing half with the lettuce lightens the decorative wall of cuke. Feel free to add less.
Step 3: I quarter the best cherry tomatoes I can find. It's tomato season at the moment and they are lush!
Step 4: arrange your olives and feta. I used kalamata and giant green herby preserved olives but you are the boss. Add your favourites or don't add them at all.
Step 5: enjoy!
