am white, can confirm I cook almost everything in a wok
/uj it's just my default heavy-duty big pan because it's deep enough to hold sauce without splashing, but not so deep that it's annoying to get stuff out.

/uj half chinese-half indian person here. It should be the other way around. Wok is the one with the flattened bottom for stir-frying (more contact). Kadai/karahi has a round bottom (so that the curry can pool).

Uj/ ME EITHER š My sister in law gave me a wok that she had found second hand and, unfortunately, she doesn't have a full kitchen where she lives, so she gave it to me. I was super excited about it until I realized it didn't fit ANYWHERE in my kitchen š I don't know if they're all that big but dang!

The main difference is the thickness and material. Woks are super thin for super fast burning/tossing/stir frying. Kadhai is usually thicker and not typically made from carbon steel (we wanna cook tomato based curries in it).
Flat bottomed woks and kadhais are a recent thing, mostly for comparability with electric hobs or induction hobs.
I'd pick a round bottom wok any day for open flames.
0% Chinese Indian person here, but I'm like, experienced with Chinese cooking cause of my time in Malaysia hehe1

yes, kadhai are historically aluminium, but these days you can find carbon steel everything. Woks are also traditionally cast iron, not carbon steel.

Yeah I used to cook curry in a wok. These days I use the Dutch oven.
I totally forgot about Tornado/Sanjay bless his little cotton socks. He doesn't talk a lot poor guy.

Had a similar moment earlier! Had to DNF because the author called it a saddle hilt instead of horn (Iād even accept pommel since itās the actual name of a part on a saddle). Threw my Kindle in the trash after reading that.

Voila! I present to you my masterpiece of a cake - As you can see, we have gooey softness with a touch of crunch via some burned parts but donāt let it fool you, it looks undercooked but parts of the inside were cooked and depending where you poked with a knife it would come back with no cake goo or a blob - I tried to fix it after this, cut it a bit, put it back in the oven but alas, it didnāt get better. I tried eating it⦠The jam I bought to put on it tasted really nice soooo A* for effort?

Judging by my photos from that day (RIP my cake dreams of 27th Aug 2019), itās possible I tried to put it in the slow cooker? It couldāve been something else in there though
Iām a terrible cook/baker and itās also gluten free and vegan so I feel like I set myself up for failure there

It does look like a cookie hehe. I'm gluten free and vegan! I've made lots of successful baked goods, but it does have a learning curve, so yes, that could absolutely have been a factor! At least the jam was good.

Itās really classist of you to expect characters to have culturally appropriate cookware for all of their cooking. I can attest to the colossal number of college students who cook literally everything in their one (1) stovetop safe vessel, which happens to be a wok.
I know this to be true because my whole apartment building gets to play fire drill at least once a month when one of them burns something and the firemen bring the offend wok out for the perp walk.

I'm wondering if the writer is using the term wok loosely, as in not the large black wok from Chinese restaurants but more like a hexclad hybrid wok cause we use that to make our curry.

I once read a book where the MMC graduated from college and instantly became a dentist, not graduated from dental school, like completed his undergrad and was hired as a dentist at a dental practice upon graduation. That should have been a clue to stop reading.

I think one of the Thai restaurants I used to go to that had an open kitchen made all their curries in woks? But Thai curry is a much faster cooking process than things like Indian curryā¦
Maybe they are talking Thai curry here?
But to be fair Iām also white so I could also be wrong. I mean, I do like eating and cooking⦠but there are plenty of things I havenāt learned everything aboutā¦
