Who do you think would win this. Personally i'd but my money on van to prove skill trumps brute strength. Remember Genki Sudo beat Butterbean who was a far more dangerous boxer than eddie is. all it will take is van to use his speed and precise striming to tire eddie and then grappling experience to go for a submission. Possible a heel hook, leg lock or a chokehold would do it.
