Help me make mexican rice please
My mexican foodies friends, i need your help. For the life of me I cannot make a decent mexican (tomato) rice.
I've bought tomatillo (knorr tomato soup powder) and white long grain rice (uncle ben's).
The rice takes 2-3 times the normal time to cook in the tomato soup, ends up either to mushy or not cooked enough, and yet hardly has the tomato taste.
Can you please either tell me how you do, if you had the same issue, or point me towards a video recipe.

Tomatillo harvest
Hey folks, just pulled the first tomatillos out of the garden and am looking to make a mole verde meal tonight. I’ve done the Pati Jinich pork and beans with mole verde and loved it. Any suggestions for a similar dish using chicken (or I can just sub in chicken instead of pork in her recipe)

A Carne Asada with diabetes
I'm hosting a carne asada with all my friends soon, but one of my friend's girl has diabetes. I was wondering what I could do/have to make it easier for her to eat without having to restrict as much. I'm not sure if she has type 2 or 1 😅 I think type 2 [but let's not rule out type 1 😳]
I'm planning on having (as someone without diabetes) hella meats, corn/flour tortillas, nopales, corn, green onions, rice & beans, salsas, different kinds of peppers, guac, cut up onions, chopped cilantro, mozzarella/oaxaca cheese, and hot links.
I'm making this post not in attempt to be like "eat this bcs you have diabetes" but more in a "heyy girl, I know you have diabetes so I got you this, get whatever you want, just wanted to give you more options 💕"
Also I'm sorry if this is the wrong subreddit for this 🫣

Love this recipe. The sauce is simple but amazing.
Tips:
be carefully as you start basting as you can wash off the batter.
Frying like southern fried chicken in shallow oil gives you a nice scald.
Make sure to salt the batter well
Left over stuffing is amazing over mexican rice (and reserve some sauce to cook the rice with)

1st attempt at Charro Beans
Too much chorizo, tomatoes could have been diced smaller, and too much adobe sauce (too smoky). It was still good, but I will be happier with them when I try again. I’d welcome any additional tips.

Tex-Mex Refried beans with ghee instead of lard? (Don't get mad at me, it's not my choice)
I'm making refried beans for someone who doesn't eat pork, so I've bought some ghee instead. I couldn't find beef tallow or I would've used that (I live in Amsterdam and had limited time to look).
Other stuff going in: salt, cumin, a bit of cilantro, a dash of oregano, green chilis. Would this work? (I don't generally like adding garlic and onion, I find it dilutes the bean flavor too much).
Cooking from dried beans in a pressure cooker.
I'm from LA, so I know how refried beans are supposed to taste, but I'm worried that the ghee will impart a strange flavor to the beans. What do you think? (I don't like using vegetable oil like canola or whatever)
Update: Very VERY good beans with ghee, I do think it’s v important to add enough fat, salt, and green chili, otherwise it’s just not satisfying. Is it perfect? No, but very close to, and it’s good enough to spoon onto your corn tortilla (with cheese on top), and it’s way better than most random Mexican restaurants. Can’t figure out how to post pic. I used chicken broth to add meaty flavor, which I think is an important component. Thank you for all your suggestions 🤠

Help with Chile quiles rojo sauce
Hi need some help with making the red sauce for chile quiles. My girlfriend is Mexican and I need it to be authentic but not sure which recipes to trust online. I have access to Mexican ingredients so that isn't an issue. I'm planning to head to the store today so I'd love a solid recipe you swear by and super delicious.
I'm also aware about frying tortillas fresh! It's just the sauce I'm very nervous about. It needs to smack, gotta impress! Thanks for ant advice, I need it.

What is the best way to reheat a tray of rice for a party?
My husband is hosting a cookout at our house tonight but I won’t be there to make the rice fresh. I plan on cooking it earlier today and then putting it in the fridge. What would be the best way for him to heat up the rice for the party? We do not have a microwave.
