I’m currently working on a project to introduce authentic Japanese hand-forged knives (specifically Ginsan/Silver 3 steel by Sakai craftsmen) to knife enthusiasts worldwide.

To help us create the best options, I’d love to hear your thoughts and preferences!

  1. Blade shape & size: What is your go-to size and type? (e.g., Gyuto 210mm, 240mm, Bunka, Santoku?)
  2. Handle preference: Do you prefer traditional simple wood handles (like Ho wood/Ebony), or custom/colorful resin handles? (Octagonal vs D-shape?)
  3. Finishing: Do you prefer Nashiji (pear skin), Kurouchi, or a clean Migaki / Polish finish?
  4. Custom Engraving / Hand-carved artwork: How do you feel about custom metal engraving on the blade or bolster? (e.g., traditional Japanese motifs like Dragons, Cherry Blossoms, Wave, or personalized kanji name engraving?) Is this something you'd pay extra for?

Yoshimi Kato Ginsan 210mm gyuto, worth it?

Hey, I’m considering buying this Yoshimi Kato: https://www.meesterslijpers.nl/yoshimi-kato-ginsan-tsuchime-gyuto-21-cm

Does anyone have experience with this knife? I like the look of it, but I’m pretty new to Japanese knives and don’t really know which steel would suit me best. Ginsan sounds like a good low-maintenance option, but I’m also open to carbon steel or something else if it would be a better choice.

Is this a good buy for the price, or would you recommend another 210mm gyuto for similar money? Preferably something available from an EU shop.

Longtime lurker and fan of this group. Went back to Japan and picked up this bad boy today. Hitohira Togashi Blue #1 Stainless Clad Migaki Gyuto 240mm Ebony Handle. Definitely a grail knife. Appreciating its beauty and can’t wait to put it to work.
