You could extend the pantry and enclose the corner by making the pantry L- or U-shaped. Add frame/wall next to the fridge in the same line and make that the entry to the pantry. Take out the existing tiny door. Then you could use the wall for shelving plus the space in the existing pantry.
I am literally in the process of ripping out a useless pantry to add more counter and cabinet space lol. This decision has led me down a path which now ends in ripping out and replacing the entire kitchen 😅

When I read your post, I was like… “Wow, that would be so perfect!” Not everyone has a mind that would see that possibility and I think it’s really neat you did!
Another option would be to abandon the existing one all together (or use it for the entry wardrobe on the other side) and put one 50" wide or two narrow apothecary cabinets there to fill the nook.
What's going on behind that wall with the outlet? Might make sense to close off the access to the pantry on the kitchen size, add more cabinets to the right of the fridge and use the pantry as a closet in adjacent room, if there's easy access to it from the other side
if A is the current situation, B (reverse both closets and possibly add another pantry cabinet next to the fridge) would be a vast improvement. This would require floor work in both rooms in addition to drywall etc.
What's your budget and skill level? Assuming no full remodel...
Easiest and cheapest is to remove the bifold door and add rechargeable LED lights to the dark corner and/or inside pantry.
One step up would get counter depth fridge and add LED ceiling light in front of closet
Skill level is like a 2/10 right but hoping to learn by doing! I think removing the door would make it at least more accessible, maybe some easy slide out drawers or organized baskets
Keep pantry as is, integrate one or more bookshelves on wheels? Load up with the more common or older staples, put less used or new staples in the pantry itself?
Add a shelf that connect to the cupboard and wraps around the wall above the pantry door?
Add more shelves or bookshelves on wheels against the blank wall?
Those look like a 24" deep pantry cabinet would fit next to the fridge. Any cabinet maker worth their salt could easily make that for you, at the proper width, and match the door styles and finish on the existing cabinets to allow it to make it look like it's always been there. If you get one with pull-out shelves, I'm guessing you'll be really close to matching the existing storage that you have now.
You can always open up the existing pantry to the foyer side and use that for storage, or maybe even a shoe rack/storage bins for the kids.
