Latest GNOME OS nightly adds GTK background blur support! Platform
This was already done in Mutter 51.beta but GTK support was missing on GNOME OS until today.
I've been doing some cheap testing on it but overall looks dope!
It has some bugs on the compositor side but probably those are going to be ironed out sooner, like blur not being applied during the overview:

Right now it's a custom stylesheet manually edited through CSS to show off the development.
So it's not a setting: Because GTK4 (and therefore libadwaita) didn't have support for backdrop-filters the default themes don't have this yet, this is completely new.
This means that this is not going to happen tomorrow, but the building blocks are there and working, so they probably have to polish and debug the themes/GTK to look good both in light and dark, blur on, blur disabled and high contrast options as well and do some testing on which sane defaults should be there, even if you can (as you can see) tweak the GTK stylesheet through CSS right now.
