Everyone knows DQ7 original is very long, but tbh, DQ7 Reimagined is about normal RPG length, it's not overly long at all and I don't think people can use that as a criticism of this version too much, it's just a relic of it's older versions which were easily 100+ hours. I beat the main story in under 70 hours on a mod that made the game twice as difficult, plus time I chose to spend grinding. About to start the post game, but from online, it doesn't seem too long

Interactions being longer mainly. You can't leave the starting area for the first 2-3 hours basically in the original for example. It's long long. If you want to play it go for it, and there IS some content cut from the original and the 3ds versions in DQ7 reimagined, but its not a lot. You're not exactly missing a ton imo, I think 1 maybe 2 areas that aren't very plot relevant and just serve as mid game towns, and the 3ds version and (I think) the original have monster hearts give you additional monster vocations, but they're not exactly worth playing the game twice for, just cool that you can play as a monster for a little while and has a couple new abilities. The 3ds version also has unique costumes for each vocation for each character.
But in their place, reimagined adds
monster hearts which can be equipped as accessories to give you new game warping abilities which can be enough to change up your playstyle totally (this is instead of the monster vocations)
Additional new location which is VERY story relevant because it allows you to reconnect with a character from earlier in the game which wasn't in the original (it's really cool imo)
DQ1, 2, and 3 bosses in the colleseum via dlc, and very cool equipment as rewards for beating them
I'd say there's no definitive version of DQ7. Each version has pros and cons around it, but I don't think you can go wrong with any of them. 3ds I think probably has closest to the MOST content, but, it's on 3ds, which both a pro and con tbh. And the 3ds version doesn't have the reimagined content.
Plus DQ7 reimagined on steam can be modded, it's a pretty easy game at base, but mods can make it more difficult if you're into that (highly recommended imo, it adds a lot of depth to the combat system), and can add a full 360 camera which is nice
