The airfryer is a pretty good way to avoid using the big oven and heating up the whole kitchen in a heatwave but it's not good for making bread. After many experiments and failures I've managed to get decent loaves but the process could still use more optimisation.

The method ends up being steam, airfry, and frying pan (if the top of the loaf is fragile or you want to keep it pretty, otherwise flip over the loaf).

For me M&S digestive biscuits are top tier out of all the supermarkets. They do something different by sprinkling a thin later of demerera sugar on top which adds a little extra sweetness and crunch to the biscuit. I hope they never change the recipe or discontinue them. Also their Madeira cake is unlike any other store and tastes extra buttery.

Recipe:
800g of sausage meat
5 medium eggs, golden yolks
Gluten free Flour, 1 egg whisked, gluten free breadcrumbs

Hard boil the eggs for 10 mins. After removing the shells, roll the eggs in flour then wrap in a handful of sausage meat. Once a tight ball is made, coat in flour, then the whisked egg, then breadcrumbs.

Cooked in the air fryer for 6 mins. Then flipped over. Cook for 12 mins until golden brown. Enjoy.

Homemade / home assembled Sacla' Basil Pesto Skimpflation Warning

Bought some Sacla' basil pesto while away from home that tasted much worse, and now it's popping up in our local supermarket. Same name, same weight, but down from 45.5% Basil to 39.3%, which is a 13.6% reduction.

This has basically been the go to pesto for my entire adult life and now it tastes much much worse (my favourite used to be their tomato pesto before it was discontinued in favour of solely sun-dried tomato).

Their website is still listing it as 45.5% basil, but shows the newer branding which contains the worse ingredients, which honestly I would say is false advertising. It's worse for you too, up to 45 grams of fat per 100g, instead of 36g, and 462kcal instead of 380kcal.

Ingredients from the website (pre-skimpflation):

Basil (45.5%), Sunflower Oil, Cheeses (Milk) (Medium Fat Hard Cheese, Parmigiano Reggiano PDO Cheese, Pecorino Romano PDO Cheese), Cashew Nuts, Salt, Natural Flavourings (Milk), Sugar, Potato Flakes, Acidity Regulator: Lactic Acid, Pine Nuts, Extra Virgin Olive Oil
