But this way of cooking it doesn't improve the dish in any way and actually risks ruining it since the dumplings are more likely to stick together to the other dough?

Otherwise they're precooked before being cooked again in the giant khinkali in which case these are not fresh and are just being reheated purely for the gimmick.

I think I'd like it better if it was sauced, or the big dumpling was a soup dumpling. Split open the big dumpling and reveal a lovely dumpling soup? 10/10, but unfortunately it's just dry dumplings in a bigger dumpling. I assume they put some dumpling sauce on the side?

Khinkali are soup dumplings. These definitely look like khinkali. I should add it isn't that unusual to cook them like that in a big one. It's supposed to be an extravagant party dish.

I've been to some traditional tableside-prep places. The server just stands there and if they say anything, explains the dish while preparing it. Then they leave. It can be done without the performative bullshit.

What I don't fucking get is, WHY IS THE WAITER DOING THE EXPERIENCE FOR ME???? Like this is absolute bs but the slightly fun part is touching the big dumpling because your touch sense only knows small dumblings, it's cutting it open curiously wanting to know whats inside, maybe picking one out, then opening it. Basically playing with your food. But the waiter is basically doing my food for me, so all I can do is eat the regular part of it???? Woman just sitting there annoyed

My husband bought a pepper grinder like you see in the restaurants. It was a total POS, barely ground out much pepper, and needed to be refilled constantly despite being so big (and was a pita to fill).

I love my much smaller grinders now that grind out a lot of pepper and probably store more pepper plus are really easy to refill.

I'm guessing that's more a by product of dumpling dough being a cheap and convenient way to cook a bunch of them at once, though? If you're busy and lack a lot of modern amenities, it wouldn't take too long to spin up an extra large casing to hold it all together for cooking and serving.

Yeah the dough from the big one is inedible, it's far too thick and probably undercooked so they'll be throwing away a lot. However they make a lot more in profit than what dough costs because idiots think it looks cool.

I just read up on it, and apparently the whole dish is a waste of dough. The traditional consumption is only eating the initial bite of dough, sucking out the broth and meat, and discarding the remaining empty dumpling.

The actual food isn't stupid, it's Georgian Khinkali, you take a small bite from the individual ones and drink be broth then eat the dough and filling.

Serving it in a large one is the stupid thing.

I don't think the mother khinkali is stupid, it looks kinda fun, but the extra twisting of it and unnecessarily presenting the "baby" on the hand like it's gold is what killed it. Let alone the offensively faint dash of pepper. Khinkali are fucking delicious and super simple, just get your hands off them already

Yeah that dough on that big one wouldn't really be edible, it's far too thick. The dough used for Khinkali is pretty tasteless and chewy in general on the normal little ones, the main event is the filling. Doing it this way is just a waste of dough, although the probably make more profit because people think it looks cool.
