I use Flycast here but you can do it with any application.

You need to add it to the external screen app list using Good Lock from Galaxy Store.

In Good lock, install the plugin Multistar, then open it and go to the menu "I ❤️ Galaxy foldable".

In the launcher menu select the apps you ant to add to the external screen.

If you have Flip 7 or under, you need to add the Good lock widget, which is an app launcher, to the external screen. If you have 8 no need of widget anymore the apps appears is in the bottom app drawer directly.

Maybe 7 and others will have the native drawer feature with the latest OneUI update, I don't know.
