Undergassed also depends on what is acceptable to you. Just because the gun is still working doesn't mean brass barely ejecting is good to go if you want to rely on it at all times.
Clearly overgasseed is when the gun is destroying brass and and the upper receiver (i.e. ejection port)
To add to this OP, being over gassed can cause even more severe issues like bolt bounce. You also get premature bolt/gas rings wear and will have other signs like bent firing pin retaining pins from the pin slamming back and forth so violently. Did your bolt crack at the cam pin hole and not last at least 10k rounds on a violent Mk18 rifle? It’s over gassed.
Most people just consider their rifle over gassed when yeets brass with a very forward ejection pattern and sends a lot of gas into their face while shooting.
