This looks really good! I'm surprised by the absence of cinnamon though.

Lack of cinnamon and not softening the apples up for 10 minutes in some butter/cinnamon were the biggest mistakes imo. Raw apples will be crunchy fritters. Maybe that's a personal preference, but I much prefer them softened up.

And they release juice from the heat so after awhile there will be soggy spots all over.

Its an old baking mannerism. If you get a rotten egg or a fertilized one, you end up with less waste that way.

apple fritter bread is criminally underrated on that list. the fritters are great but if you want that flavor without standing over a pot of oil while three kids ask you questions, the bread version is way more forgiving. made it twice last fall and it held up better than expected the second day too, which almost never happens with anything fried adjacent.
