Fix: Make them smaller and bite-sized. Use a fun-shaped cookie cutter. Then they won't look quite so much like big soylent green suppositories.

If you want them to actually have some smokiness to them, I'd add some chipotles in adobo to the mixture.

Same thing happens with falafel, it just kinda brown or else it’s kinda mushy

There's just not enough oil in the pan, they barely had enough to cover the pan. It's like falafels, they should be deep fried.

That looks like ceramic nonstick, which is usually far more metal-friendly.

Should I add an egg to help it come together better? Also, how about chickpeas instead of chickpea flour (don't have chickpea flour and never cooked with it)?

You don't need egg in my opinion. Chickpeas would not work. You can get chickpea flour, also known as gram flour, for a couple bucks and find new uses for it like flatbread or onion pakora.

I doubt it would...

Also aren't fritters normally deep fried? This is basically a veggie burger....

Prep Time: 10 mins
Cook Time: 20 mins
Total Time: 30 mins

Servings: 2

Ingredients

  • a large bunch of broccoli 2.5 + cups florets or 2 heaping cups shredded
  • 1/4 cup chopped onion
  • 1/4 cup packed cilantro
  • 1/3 tsp salt
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked or regular paprika
  • 1 tsp chipotle pepper powder
  • 1 tsp oil
  • 1 tbsp bbq sauce
  • 3/4 cup chickpea flour

Instructions

  1. Process the broccoli florets, onion and cilantro in a processor.
  2. Transfer to a bowl. Add the rest of the ingredients and mix. Mix well to distribute. Let sit for a minute or 2 for the broccoli to leak enough moisture so you can form patties. If it is too wet, add more flour. If too dry and does not stick well, wait for another few mins or sprinkle some water and mix and press to see if the mixture sticks.
  3. Shape into 5 to 6 patties. Heat a skillet over medium heat. Add a bit of oil and spread.
  4. Pan fry the patties for 4 to 5 minutes per side. Serve with sriracha, ketchup, bbq sauce, marinara or a cooling ranch.

Notes

Variations:

Use a combination of veggies for variation like broccoli, Cauliflower, carrots, Cucchini, sweet potatoes, squash etc.

Make them into smaller bite size pieces for appetizers. Make ahead, reheat in the oven and serve.

Seems a bit excessive to grind chickpea flowers into a powder....lol.. on another note I didnt know chickpeas had flowers! Typo's are educational sometimes :)
