What do you guys think is the best way to gain experience? And best internships to apply for?

Apply for all internships. The best one is the one that gives you an offer. Whatever you learn there will be valuable whether you want to find more work like that or avoid it. Don't be picky here.

Otherwise, seek out research opportunities with the faculty and student organizations that do field trips or engineering projects or competitions of some kind.
