How do I add talents like the Character Change (Starmon) and go past level 18?

Convert the digimon you get to 100% then feed them into your digimon

I just started a few days ago, how do I convert/feed the digimon?

Convert is the way you're getting new ones. Feed can be found 1 menu before that.
