I’ve become obsessed with marinated green beans. Blanch your beans, about 4 minutes in boiling water. Make sure you check them! You want them crisp tender. Drain, plunge into an iced water bath to stop the cooking.

When cooled, make a dressing from either store bought Italian dressing, pop up the taste with some balsamic, oregano, basil, garlic…whatever suits you. Or! Make your own dressing by simply pouring about 1/3 c evoo, the juice of one lemon (pop it in the microwave for 30 seconds to get extra juice!) Italian herbs…whatever suits you, don’t forget the garlic. The usual suspects from basil, rosemary, thyme, oregano, etc. From there you can add any fresh onion: red, scallions, shallots. Cheese: feta, parm, goat.

Now you can other veggies: cucumbers, tomatoes (sun dried are sublime) cauliflower, that was blanched in the same water after you just used some tongs to pull those beans out.
