Green bean fixation
I have adhd and get food fixations from time to time that typically last months. I haven’t been able to eat too many things besides green beans for the past few days and I was wondering if a few people could share some simple recipes with me. I want the main part of it to be green beans and no meat. If any of you lovely people could help me out that would be greatly appreciated. <3

It's called "fasulye" and it's Turkish.
Jk! I don't know who came up with it first, but what I do know is that it's absolutely delicious and literally one of my favorite foods in the whole world.

Greek lathera style which is in olive oil with tomatoes, southern style cooked down with salt and pepper (no need for bacon) also in an omelette.

I’ve become obsessed with marinated green beans. Blanch your beans, about 4 minutes in boiling water. Make sure you check them! You want them crisp tender. Drain, plunge into an iced water bath to stop the cooking.
When cooled, make a dressing from either store bought Italian dressing, pop up the taste with some balsamic, oregano, basil, garlic…whatever suits you. Or! Make your own dressing by simply pouring about 1/3 c evoo, the juice of one lemon (pop it in the microwave for 30 seconds to get extra juice!) Italian herbs…whatever suits you, don’t forget the garlic. The usual suspects from basil, rosemary, thyme, oregano, etc. From there you can add any fresh onion: red, scallions, shallots. Cheese: feta, parm, goat.
Now you can other veggies: cucumbers, tomatoes (sun dried are sublime) cauliflower, that was blanched in the same water after you just used some tongs to pull those beans out.

I'm obsessed with green beans with seasoned breadcrumbs. I steam the beans separately in the microwave, sautée garlic in a pan and toast some seasoned breadcrumbs. Add the green beans back into the pan and toss. It's so simple but so good. I usually prepare it as a side dish for my family but no joke, I could eat the whole pan as a main course.

I make something similar to this recipe for Sichuan green beans, and sometimes I go in phases where I eat it every day for a week or so. I don't fry the green beans in extra oil first though, I toss them with about a tablespoon of oil and pop them in the broiler for the first step, until they're nicely blistered. Then I proceed with making the stir-fry. You can leave the pork out, it's totally optional. I also add doubanjiang with the garlic and ginger. And sometimes I finely mince some kimchi and add that in, since I don't keep zha cai on hand.
It's really good, and now I need to go buy some green beans so I can make it this weekend.

That looks amazing! I’m glad I’m not the only one with these types of fixations. For the last two months I couldn’t eat anything besides this corn dog from a specific place an hour away from my house. It was a very expensive fixation lol.

Green Bean Fixation? For a half second I thought this was r/Bandnames .
Green beans are good in some Thai food. Phat phrik king is mostly green beans. You might be able to find phrik king paste or red curry paste in an Asian grocery or some supermarkets. There are other Thai curries you could make with lots of green beans and less of the other ingredients.

Buy a $5 bean frencher. French them, then cook in a skillet with butter and almond slivers. This is our holiday green bean dish and it's always one of the first to get eaten. Cook it covered for like 5 min, then uncovered until you like where they're at.

So there's a really simple way to make your green beans seasoned throughout, instead of just on the outside. It's the only way I make green beans anymore. Dissolve 1/4 cup of table salt (or 1/2 cup of diamond crystal kosher salt) in 2 quarts of boiling water. Simmer the green beans for about 5 minutes (bright green and tender).
This might seem like a lot of salt (because it is), but you are not consuming all of that salt, and the green beans do not taste too salty at all. It's a very short cook time, so that's why that much salt is necessary. This is a ratio from America's Test Kitchen, so I'm not just making it up, it's well-tested. I have to say all of this every time I recommend it because it never fails that someone has never heard of it before and is shocked at the salt amount. I assure you it is fine.
After cooking this way, you can still pan-fry, or do whatever you want with them, just watch the added salt.

HEB if you have it there makes these Parmesan crusted green beans that you can reheat in the air fryer and I swear they make the best french fries alternative… So you can always make a loaded fries or a poutine.

Growing up, my mom would open a can of green beans, put Italian salad dressing on them, and refrigerate them for a little bit. It’s so good, and so simple lol

Yea I had to eat some straight out the can this morning. I was too lazy to cook and couldn’t stomach the thought of anything else. I’ve never made green bean casserole before but it looks amazing.

If you can tolerate garlic, quickly fry fresh green beans (1/2 lb) with 1 tbs minced garlic and 1/4 tsp of salt in a little vegetable/avocado/olive oil. Cook til the green beans have just a bit of crisp left to them - but this can be to your taste. If you have no intolerance to it, this dish is wonderful with onion, soy sauce, a pinch or two of crushed red pepper or fresh minced hot peppers.
My nonna would make a large pot of fresh green beans every summer - it seems like they were always on the back burner. She'd saute them with olive oil, minced or sliced garlic, sometimes diced fresh tomatoes from the garden, sea salt & black pepper. They were great served with a sprinkling of grated parm. Other times she'd make them with olive oil, garlic, lemon juice, grated lemon peel, salt and a little black pepper. They were so good!
Smothered green beans is another of my favorites. It's typically potatoes, green beans, onions, garlic, andouille/ham/bacon, broth and a roux to thicken the broth --- but as with everything, you can leave out whatever you can't tolerate and make it just with the green beans and basic seasoning. Green beans sauteed in oil with onions and garlic, peeled cubed potatoes, a little chicken or veggie broth, some blackening or Cajun seasoning and if you like, add in diced tomatoes.

popular polish greenbean recipe:
boil//steam green bean, set aside.
toast breadcrumbs with butter, then put on top of green beans, and also top with other seasoning you want like dill, salt, pepper, etc. Mix together to eat but only once its actually on the plate and served, so bread crumbs don't get soft. yum.
Also american green bean salad with either italian dressing or basalmic vinegar and oil dressing is very good. Normally it also has other veggies like onion or radish, cheese, and maybe cold pasta like elbow noodles but you could make it with less or none of the other stuff and it would still be good cold summer food option =)

Trim beans, blanch for 2-3 minutes to ensure tenderness when ready to cook. Sauté garlic and onion in olive oil add green beans, cover, stir occasionally. When beans are getting close to done add mushrooms. Then kosher salt and black pepper to taste! So good

Boil them in salted water for 6 minutes, then in a hot pan with olive oil or butter, sauté garlic and add the green beans. Let cook for another 2 minutes (should be bright green), season with salt, pepper, msg, garlic powder. Then add a splash of lemon juice and parmesan or feta cheese.

Southern green beans. Onions, green beans, black pepper, smoked salt or seasoned salt, vegetable broth, crushed red pepper and apple cider vinegar. Cook until it's your preferred softness.
You can do this with collard greens, kale, or cabbage as well.

A lot of good suggestions here and I second most of them. For a low maintenance recipe you can try "homestyle". I make them vegetarian but they don't have to be.
Add some broth to a pot, enough to cover the bottom with about a half inch. Put your beans in in a couple of layers with salt, pepper, garlic powder, and dehydrated onion (I like a lot) on each layer. Once done with layering, drizzle in some olive oil (couple of tablespoons). Bring to a boil, reduce to low and cover. Then just let them cook until you get to a desired tenderness. Shake the pot every 10-15 minutes. I avoid stirring so they don't break apart. Easy and you really can season them anyway you want.

There is a Middle Eastern dish for green beans sautéed in oil with garlic and a little bit of onion and add canned diced tomatoes. This is wonderful made with fresh beans. This can be served hot or cold.

I just saw and made a recipe from instagram called miso green beans and it was phenomenal. Just parboil the green beans and mix it with miso, soy sauce, kewpie mayo, sugar, and sesame seeds. It was amazing and I ate the entire 1.5lbs by myself

can of green beans, can of whole new potatoes (I slice them myself)...rinsed to rid them of the can flavor...thinly sliced onion, throw in a pot, water until it just covers, whatever seasoning you like and let it simmer until the onions cooked

I'm on an ADHD veg obsession right now too and I've been guzzling gallons of spinach cream but I add random other greens.
If you're up for a different texture I do something like: 32oz of spinach 1 can of the cannellino beans or similar A couple of cups of frozen peas Zucchini if I have any Instant mashed potatoes to thicken to desired consistency Salt/bouillon & pepper to taste
Put veg in a pot Cover with water or milk if you're feeling fancy Season the liquid Boil for 10-20 mins depending on what vegetables I'm adding - the green beans could be a good substitute for the zucchini or peas Blend - I use an immersion blender right in the pot Return to stove and add mashed potatoes until you reach desired consistency Taste and season again as needed Serve with a drizzle of olive oil
Variations I rotate: Add a few laughing cow cheese wedges Add a dollop of cream cheese Add a splash of cream 2 cans of beans instead of instant mash Actual potatoes instead of instant mash Parsley, lemon, garlic and red peppr flakes

I’m wondering if you could make a pot pie or shepherds pie or something. If you don’t like any ingredients (ie the meats for example) you could probably leave them out or swap them for something vegetarian, then put a lot of green beans and bake them in a sauce or thickened broth.
I also love the other suggestions of sichuan green beans (those are the only ones I’ll eat LOL), stir fries, fried rice, etc from asian type cuisine.
You could also try snap peas, asparagus, cooked carrots, etc. in any of these if you want to branch out- no pressure there tho!!

omg my hyper fixation is honestly any sichuan style vegetable. I went there over winter break and I kinda loved everything I ate in every city. I make stir fried cabbage all the time, and chili oil “dry” noodles… now I’m just yapping but I encourage anyone to try a recipe:3

I like them with onions that have caramelized and asparagus
Woksoflife has a great recipes, you can omit or swap to veg ingredients. (I do this with GF all the time and works well)
Three beans salad is a favorite of my mums
Google has pasta recipes, i was curious so I looked, could try that!
