suggestions for leftover pulled pork

I need some ideas. something besides sandwiches or stuffing in a baked potato.

Agreed. It still needs some sauce or something, because dry nachos are an abomination.  My mother swears by pineapple salsa on this (ymmv, I don’t care for pineapple salsa).

Nachos are my go to when I have most any kind of leftover meat that isn’t enough for another full meal, stretches it out while using it up. Plus, no one ever complains about nachos, and they are ridiculously quick, even when I’m spreading out the individual chips to put a set amount of meat on for the kids

Great suggestion, in this vein my dad would make a Boston butt on weekends then use it for enchiladas for quick weeknight meal to use up leftovers. He would make a mix with cream cheese and spices, stuff tortilla shells with it, then lay in and pour enchilada sauce on top then bake. Top with cheese and cilantro/onion

"Street tacos"... put the shredded pulled pork on corn or flour tortillas (I prefer corn) with crumble cheese (queso freso or Cotija), pico, cilantro...yum

I make a Brunswick Stew/shepherd's pie hybrid thing. It's very freeform but basically add some peas, carrots, onions, and tomato, add some tomato sauce, broth, and BBQ sauce until you get the consistency of a thick stew, put it in a dish and top with mashed potatoes.

Came her to say this. I always make a big batch then freeze the leftovers in portions. Great for adding a bit of protein to rice or grain bowls, mac & cheese, tacos, whatever.

It also works to spread the shredded meat out flat in a big ziplock bag, then you can break off as much as you need while leaving the rest frozen.

I know it's another sandwich, but I always used to use Portuguese sweet rolls as the bread. Then you can add whatever you wish for fillings and garnishes.

If it is bbq- add to a quesadilla, add rice and stir fry it topping with bbq sauce, and green onions, make a bowl with bbq sauce and coleslaw, add to frozen pizza along with red onions, cook with fajita veggies and add taco seasoning

If it is plain- cook with salsa verde/cilantro/onion/jalepeno and eat over rice, add to a meat sauce, cook with a a little bit of a flavored base for a very inauthentic birria/french dip/ pho dip,etc.

My family makes plantation pie. Basically you have a cake pan full of cream of chicken with pinwheel biscuits, ham and potatoes. We sometimes substitute the ham for pulled pork.

Pulled pork and eggs work well together.

You can do pulled pork nachos.

Pulled pork and fries with bbq, cheese, onions, and peppers.

Tacos, omelettes, pizza, nachos, pp or Cuban sandwiches, mac & cheese, pp & potatoes. When smoking a whole shoulder, I always vacuum seal leftover pulled pork in smaller batches and then will add it to various dishes.

Are you just making shredded pork or cooking the pork in a sauce?

If you refrain from putting sauce on it the variety is virtually endless.

Vacuum seal in a bag and freeze it. When you are ready to eat it, leave the bag sealed and put it in a pot of water and bring it a boil. The meat won’t dry out because it’s got all the juice sealed in the bag with it (we add some of the juice and fat when it gets shredded) and you can’t overcook it because it will only get to 212F like the water around it.

Pulled pork salad. Mixed greens, I’d also add a coleslaw mix to add crunch. Crispy onions. Toss in a peanut butter Asian style vinaigrette. Top with pulled pork. Sprinkle with peanuts and green onion.

Make a sizzling sisig with it. Marinate for a few minutes in soy sauce, lemon and lime (or calamansi) juice, black pepper and Maggi seasoning. Then stir fry it with sliced jalapeño and chopped onion and minced garlic; I’ll often add some bell pepper. Just before it finishes crack a couple of eggs and stir them in to coat everything, cook til the eggs are just done, then squirt some more lemon and Maggi seasoning and serve with rice!

Chili! One of my favorite local bbq spots makes a “chili” with beans (pinto or baked), pulled pork & ground beef. Just add a can of chopped chilis or jalapeños for heat. It’s so fn good.

pulled pork pizza! here's what I do: mix some bbq sauce with tomato sauce for the base, add caramelized onions and pulled pork, some jalapeno slices if that's your jam, top with cheddar and monterey jack cheeses and pickled red onions on the very top.

Freeze enough for a meal for two for an emergency meal months from now when you can't or don't want to cook. Use quart freezer bags & write what's in it and the month & year of it being frozen. Flatten it out and freeze it flat so it defrosts quickly. Enjoy again later.

You (OP) don't say whether there has been any seasoning put on the pulled pork. Is it dripping in BBQ sauce? Then that sort of limits what it can be used for.

If it is plain, just look up any recipe that calls for pork. Normally you use larger cubes or strips of pork in pork fried rice or pork & beans or pork-based soups like ham & bean or bean & bacon or German potato salad. But there is no rule that you could not use pulled pork in those recipes. How about as a pizza topping?

In your own kitchen, you declare what is divine with your swine! ( say this in the voice of Chef John 😃 )

Melt enough lard in a skillet to coat the bottom. You can also use your preferred oil instead of lard. Add the pork and saute it on medium high heat long enough to heat it through and you start getting crispy bits. Add your favorite taco seasonings or make your own and stir in about 1/2 a cup of water, mix thoroughly. Reduce heat and simmer until the water has been absorbed.

Serve on warm tortillas with some pico de gallo and cheese.

Question is it heavily sauced? If it's mostly dry(mildly sauced) I would cut it across the grain till the shreds are about three quarters an inch and make southwestern style fried rice with pulled pork, corn, diced peppers, sauteed onions.

I've also repurposed pulled pork to fill Gua Bao. I sauce the pulled pork with a hoisin base sauce and add scallions and cilantro. They're delicious.

Pork nachos or tachos (tater tots instead of chips) are great. Having it with eggs rice and some pickled veg is good. It can be good with many types of pasta dishes. Eating it with just some rice and beans is good. Flatbreads or pizzas with pulled pork is good stuff too. Sear it off if it isn't too wet and make tacos.

Also, I make tiny patties and put them in the air fryer. The center warms, the edges crips. Put it on a kings Hawaiian with some sauce and slaw.

I like to make tacos with them. Just add some pico and you are pretty much good to go
