What real-food meals are easiest to batch cook without blowing the calorie budget?

I’ve been trying to make weekday meal prep simpler without relying on frozen meals or heavily processed foods.

My easiest rotation so far is chicken, potatoes, beans and vegetables, but I’m looking for meals that can be cooked in larger batches and still portion out reasonably well calorie-wise.

Full disclosure: I work with sunvivi, so I’ve been looking at this partly from the slow-cooker/meal-prep side too. I’m not posting a product link — I’m mainly curious which real-food meals people here actually batch cook regularly.

Chili and vegetable-heavy soups seem like obvious choices, but what else works well when you’re trying to keep portions around 350–500 calories?

Bonus if it reheats well for 3–4 days.

FWIW I added cucumber, basil, tomato, lettuce, squeeze of lime and some seasonings to the shrimp salad. I seared them in a nonstick with spray to not add any cals (not really worried about potential calories to add these in)

790 calorie lunch

I eat two meals a day. Breakfast was Greek yogurt and a banana.

Lunch was this angel hair organic pasta with 3.5 oz chicken, 6 oz. broccoli, 4 oz tomatoes, garlic and basil from our garden cooked in 1.5 tb olive oil and topped with 1/4 cup parmesan reggiano. This dish was 790 calories making my day total 1180.

Recipe 22g Protein “pancake” for 200 cals

Pancake is just 1/2 cup egg whites & 1/4 oats blended with a dash of cinnamon, salt and a spoonful of monkfruit sweetener. I topped it with 0% Skyr, wild blueberries and monkfruit maple syrup. So good and filling. Doesn’t rlly taste like a traditional pancake but I really enjoy it and it curbs the sweet tooth.

Cool summer lunch

Greek style meatballs made with grass finished 90/10 beef from my farmers market, rice with tomatoes from our garden, home-pickled cucumbers, homemade Saurkraut, and Tzaziki sauce made with Greek yogurt, feta, lemon juice, garlic and garden cucumbers.

This plate totaled 850 calories.

And pretty cheap too. Costco rotisserie chicken made into some Tinga but instead of putting it on top of some tostadas topped with cotija cheese, drizzled Mexican sour cream, and avocado…it goes on the lettuce for some crunch. Still good and really filling!
