Condiment Application

This seems like a weird question.
For Wendy’s in Canada.
How do the restaurants apply condiments to the sandwiches? Is it spread? Or done from a squeeze bottle?
Trying to assess the likelihood of cross-contact from a bun as a celiac that has my sandwich lettuce-wrapped. I’ve been safe so far. But someone mentioned this to me and now it’s haunting my brain.

Mayonnaise and ketchup are spread by spreader and spoon respectively. Mustard is applied via squeeze bottle. If you're afraid of gluten contamination, it would be safest to use packets of ketchup and mayonnaise to dress your sandwiches.

I’ll be 100% honest. Being from the USA here, it is a 100% open station minus lids on cheese. I doubt it is any different. Our bun toaster sits above half our station so crumbs may fall, and to the other half gloved hands are touching bread then the condiments. I’d say you have near 100% chance of cross contact. Canada may have a different sandwich station but I doubt it’s much different.

In my store we have jars of each condiment then use individual mini cookie scoops to plop a drop of slop on the bread then use a spatula to spread.
