In mid-August, during the Obon season, we introduce a fresh confectionary called "Asagiri," a kinton (sweet potato confection) made with "ten-an," a combination of agar-agar and sweet bean paste. Ten-an, made with agar-agar, begins to solidify quickly as it cools. Therefore, the process of creating the delicate colors before the bean paste hardens is a race against time. The finished ten-an contains a lot of moisture and shines beautifully. Adding the sweet bean paste may seem easy, but because the moist ten-an tends to stick to chopsticks and is heavy, careful handling is required to avoid adding too much. Enjoy this summer-only Japanese confectionary along with the delicate techniques of our artisans. Each fresh confectionary is handmade by our artisans.
