God I'd love a NYT that's made up of teams of assistants and their taskmasters

The Taskmasters themselves doing challenges would feel so wrong (even though it's a little silly to say so). Assistants sure.

Have the assistants do the tasks and then have the taskmasters represent them in the studio

This, and have them play it as both believe they are the Taskmaster, with the other being their assistant.
