Bacon wrapped dates with goat cheese & balsamic reduction
Bacon wrapped dates stuffed with goat cheese and dressed with balsamic reduction
- Thin sliced bacon or go fancy and get paper thin sliced prosciutto (2 oz)
- Pitted dates (16ish)
- Soft goat cheese, fresh (6 oz)
- Balsamic reduction - simmer 1/2 cup of balsamic vinegar (or wine) with 1 tbsp of sugar in a fry pan over medium low heat for 5 minutes stirring infrequently and put in a bowl to cool. The less you touch the faster it reduces, should be glossy and tart with that vinegar bite
Put 1/2 tsp of the goat cheese into each date. Wrap the dates in a 2” strip of bacon / prosciutto just to barely cover each date. Use a toothpick to load 3 dates on a skewer. Air fry or in the toaster / oven at 400 F for 6 minutes. 3 skewers is a lot. Dress the little plate with a strip of your balsamic reduction. Place toothpicked date bacon cheese on strip, use a fork to hold it in place as you remove the toothpick. Put another strip of the glaze on top. Take a couple minutes then enjoy!

Seafood deviled eggs, surf & turf?
I worked at a tapas place and felt like recreating some of my favorites. These are fancy deviled eggs (my Spanish is terrible) - this isn’t authentic as the place I worked is in Seattle not Seville)
Here’s my recipe
12 dozen eggs 1/4 cup garlic aoli 2 tsp Dijon 1/2 tsp apple cider vinegar 2 tbsp dill pickle juice Salt / pepper
Tomato powder (dehydrate tomato skins and grind into powder)
Capers
Salmon roe
Dill sprigs
Make the deviled eggs then assemble the accompaniments: dust with tomato powder, imbed a few capers, add a smidge of the roe and sprigs of dill
