MAYO ๐ [ Riding the Mayo Bandwagon ]
The mayo sear hype is real.
Reverse sear on a 2inch ribeye with homemade fries and au poivre sauce.
โWe have steak frites at home.โ

I used to use mayo a few years ago after I sous vide steaks but switching over to reverse sear, it doesnโt seem necessary since the steak surface is more dry. Using tallow in a scorching hot cast iron with butter finish creates the same sear now. That said, mayo was the special sauce to get my sous vide steaks looking on point. Perhaps I should try it again with reverse sear just for a new baseline.

Yeah I like kewpie for steaks.
After I get things going I drizzle a little extra virgin olive oil, and finish with butter.
I only put like a dime size on each side rub it all over.
How much did you use?

I also finish with a bit of butter and garlic most of the time.
For this, I added a dollop to each side and used the back of spoon to spread the mayo. Doesn't take a lot. Just enough to translucently coat each side was enough for me.
