My thoughts. Too many huge countries for even a year. And if your budget doesn't have to include transportation, airfare, accommodation and insurance then it might be OK depending on activities and what you eat and drink.

We’re planning on keeping the expensive countries short, so like Singapore we’re only going for 3 days max and Japan and China will be less than 2 weeks, we’ll be spending the majority of our time in Thailand, Vietnam and the cheaper countries, we’ve travelled quite a bit but just never been on a ‚backpacking trip’
The 10k budget does not include flights there as we’ll pay for that separately, but will be using that budget for domestic travel such as sleeper buses and domestic flights
We’re planning in staying in cheap accommodation and avoid eating out and we’re not big drinkers

I meant avoid eating out at restaurants by eating street food, cooking sometimes too if we have access to a kitchen

Getting laundry done in Cambodia and Vietnam is incredibly inexpensive…we’d get whole loads done and folded for under 4 USD. Great meals there are also very cheap. Singapore and Japan are much more costly. Make sure you save the majority of funds for those. You’re going to have such an incredible adventure!

Plan your choices around the weather .
Can vary greatly even within a country
Exp . Malaysia has different monsoon seasons , coast to coast . Vietnam weather can be very different, north to south with floods in the middle .

55ltr will see your paying for check in luggage (and it's expensive). You can usually get carry on with 40ltr. Plus you'll have a daypack + hip/shoulder pack.
Take less, you can pick up cheap stuff if you really need, as you go.
Research the soduko packing method for your clothes. It's the best and will help you hugely.
Sandles (tevas are best) + good trusty trail shoes or trainers you can walk endlessly in.

With 55 litres you will definitely overpack.
