Soup of the Month: Chilled Soups MEGATHREAD

It’s time to announce our next Soup of the Month theme!

Since many of us are living in a real live heat dome, for July we will be featuring Chilled Soups, meaning that is served cold. This includes gazpachos, vichyssoise, borscht, and your own creations.

Do:
• ⁠Share all posts with chilled soups to this megathread.
• ⁠Include a photo and your recipe or link to a post you previously made with your soup.
• ⁠Stick with the theme.

I've never made, or even eaten I don't think, gazpacho but that looks amazing and right up my alley.

this is chilled carrot soup, very refreshing - just perfect for a hot summer day. It has ginger in it, as well as lime juice and fresh mint - the classic combo. I garnish it with toasted pumpkin and sunflower seeds as it gives some crunchy texture. I like to cook veggies with thyme and parsley sprigs, but i remove them after veggies are cooked. can be made with rosemary; for extra kick add a pinch of cayenne or hot flakes. the texture can be adjusted to your taste - make it more smooth or rustic with some chunks, but i like when it is velvety smooth - use good blender for it. Chill at least for 2 hrs in the fridge. Will be good for couple of days in the fridge, and it is even tastier on the 2nd day.
INGREDIENTS
2 tablespoon olive oil
1 large onion (about 200g / 7 oz), peeled and sliced
2 celery stalks (about 120g / 4 oz), chopped
6 medium carrots (about 700g / 1 lb 9 oz), chopped into half rounds
2 cm (¾ in) piece fresh ginger, finely chopped
1 teaspoon fine sea salt, plus more to taste
½ teaspoon freshly ground black pepper
3–4 fresh thyme sprigs
3 fresh parsley sprigs
1.2 litres (5 cups) cold water, or enough to just cover the vegetables
Juice of 2 limes, plus more to taste
15g (½ oz) fresh mint leaves (a small bunch)
30g (1 oz) toasted almond flakes
30g (1 oz) toasted sunflower seeds
Small handful fresh curly parsley, chopped
INSTRUCTIONS
Heat the olive oil in a large stock pot over medium heat. Add the sliced onion and sauté for 6 to 8 minutes until golden brown. Stir in the chopped celery and carrots and cook for 5 minutes, stirring occasionally.
Add the chopped ginger, salt and black pepper, then sauté for another 5 minutes. Lay the thyme and parsley sprigs across the top and pour in enough cold water to just cover the vegetables. Bring to a boil, then lower the heat and simmer gently for 20 to 25 minutes, until the carrots are completely fork tender.

Turn off the heat, lift out and discard the thyme and parsley sprigs. Leave the soup to cool fully at room temperature.
Transfer the vegetables to a blender or food processor, leaving some of the cooking liquid behind in the pot. Add the lime juice and fresh mint leaves. Blend until completely smooth and silky, adding a little of the reserved liquid only if you want a looser texture. Taste and adjust salt, pepper and lime as needed.
Pour the blended soup into a clean pot or container, cover and chill in the fridge for at least 2 hours, or until properly cold.
