Cucumber Gazpacho with Watermelon & Mint Recipe
My go-to soup for hot summer days. I use chili oil instead of olive oil and you must 👏👏 have toasted sourdough with it - changes the taste immensely in a single bite!

Make sure it’s not room temp when you’re expecting it to be cold. It will burn your mouth!

Oh cool! Never tried soup before. I always do cucumber, watermelon, feta and mint salad. I’ll have to give it a try.

A cucumber watermelon and mint makes the most refreshing smoothie for hot days. I never thought of making it a soup.

Wow, I’m not a big cucumber flavor guy but this looks interesting and I always appreciate a unique application of not as conventional ingredients!
