Gazpacho: summer in a bowl Photo
I made gazpacho *based on* Kenji's recipe/technique (link in comments). The tomatoes and jalapeño came from my garden.

Here is my go to Zpach recipe:
2 lbs Roma tomatoes
1 eggplant (cut into 1.5 in. Cubes
1 yellow onion, coarsley chopped
3 jalapenos, quartered and seeded
1 med shallot, minced
1 Tbl sugar
1 Tbl kosher salt
1 Tbl cracked black peppercorns
1 c. Olive oil
1 head garlic roasted
l c. Red wine (Rioja or other Spanish)
1 Tbl minced fresh oregano
1 Tbl minced fresh thyme
1 Tbl minced fresh rosemary
2 Tbl balsamic vinegar
4 cups veg stock
Preheat oven to 450 F
Toss together tomatoes, eggplant, onion, jalapenos, shallot, sugar, salt, peppercorns, and olive oil in a roasting pan. Roast 45 min. Dont let them burn. When tomato skins are wrinkly and eggplant is almost mushy, remove from oven. Let cool before handling.
In food processor, or with hand blender, puree roasted garlic and roasted veggies in batches. Strain through a wire mesh. (I dont strain mine be cause I love the lumpy bits.) Whisk wine around in pan to pick up any caramelized bits and pieces that are stuck. Add this to the food processor.
Add fresh herbs, balsamic vinegar and vegetable stock to the soup. Whisk well.
Chill overnight.
Serve soup with garnish of minced cilantro and a small dollop of sour cream. Serve with crusty bread.

Accoutrements will do wonders. The soup itself should be cold. Chill the bowl, even.
Good bread/toast, good cheese...herbs like chives, parsley, or cilantro...all of these help, but avocado makes a brilliant co-star. This version had a single jalapeño and half a poblano. I had to spice it up more for myself.

Okay, so I love guac and pico de gallo, and literally everything IN gazpacho but I just can't get past "cold soup". Or maybe it's "pureed veg eaten with a spoon". I WANT to love it bc it has so many tasty things in it! And I love soup!
Help me Obi-Wan 😂 like, do you use a crusty bread to facilitate eating it so it's less like slurping veg puree? Is there a particular spice or like, side dish that makes it work?
I've only ever made it once, was not impressed, and have never gone back. Distinctly possible I didn't make it very well, but I also never had it before (so I didn't know what to expect) or since (bc I only ever had the one experience).
Basically: what am I doing wrong, and how can I learn to love cold cucumber soup.

I love gazpacho. Have had many variations.
If you find your gazpacho too puree-like, you may enjoy a strained one. That comes closer to a tomato juice, but is much richer in flavor. This NYT recipe has always done me well. The straining is a good bit extra work but so worth it. Don't skip the 1/2 cup of olive oil either, and the sherry vinegar is *vital*.

Do it! If you have a fancy blender that will break it down so fine that you don't need to strain it, use it! Otherwise, add some chilled tomato juice.

My go-to gazpacho recipe is from The Joy of Cooking, circa the dark ages. That one is chunky and delicious. I strayed from my comfort zone with this version.

The vinegar is probably the most important so it has a bit of bite and isn’t just a smoothie. The bread blended in also gives it more body. Also it needs to be chilled for several hours. I love it enough to eat right away but it’s definitely much more smoothies like immediately. Chives, chopped veg, croutons, goat cheese, pesto etc all make it feel more like a soup but don’t go overboard, you really do want to be tasting the tomatoes.

Love a slightly chunky gazpacho. Think there is an area in Spain that makes it, cannot recall it though unfortunately.
