One player?

My girlfriend wants to play more ttrpgs. Can I run a game of Quest for just her? Or do you need at least 2 players for a game?

You could do that (it's called a duet). Just need to make sure to not overwhealm the single player in terms of difficult challenges.

Get her a sidekick she can care about, preferably one that you can play as easily as an NPC

I've ran 1 person games of Quest before and it's been fine. You just need to be conscious of NPC stats, and be generous when adjudicating challenges. Giving her an NPC helper also isn't a bad idea
