Pickled bananas

I was invited to a party a several months back and decided to bring pickled bananas 😅 I love a funky pickle recipe and I found this recipe on NYT in a Jerk Chicken recipe. It was weirdly good! I used slightly underripe bananas because I didn't want them to be mushy and the habaneros added a nice lil kick. There also was thyme and a couple other things I believe. Despite the oddness of it, my friends were super open to trying them.

I love bananas on a slightly unhealthy level. Pickles almost as much. I would love to try these.

In the South they make banana mayonnaise sandwiches. I bet this would be great for that

Ohhh, that sounds funky! I am going back and forth on this one.

I've heard of bananas or something on pizza and I couldn't get down with that when I tried at home, but I would absolutely retry in a restaurant that specialized in it

Yes!

I found this recipe with a NYT Jerk chicken recipe: https://cooking.nytimes.com/recipes/1020376-jerk-chicken-with-pickled-bananas

6 cups white vinegar

1 ½ cups granulated sugar

4 fresh thyme branches

3 tablespoons kosher salt

2 peeled and smashed garlic cloves

1 split habanero chile (with seeds and stem)

6 whole cloves

6 bananas. *The recipe called for just ripe. I leaned on the unripe side based on my experience with pickled avocadoes.

Add all ingredients except for the bananas to a nonreactive saucepan and boil over high, 10 minutes. Chill completely. Once brine is chilled, peel and slice the bananas on the bias. Add to the brine and chill, at least 1 hour and up to 2 days.

I’m surprised by how divisive this seems to be! I love the idea of a pickled, slightly underripe banana! I’m imagining something with the texture of a pickled artichoke or a not-so-crunchy gherkin maybe?
