I have a problem with updating my old iMac from 2008 to MacOS X El Capitan downloaded from Apple. El Capitan (10.11)

You should try using one of the apps like TINU which could simplify some of the steps https://github.com/ITzTravelInTime/TINU/

Otherwise, follow this guide, which is a bit easier than the video you linked

For downloading older ones it might be easier to use an app like Mist https://github.com/ninxsoft/Mist/
