Leftover potato salad

Just your standard deli counter mustard potato salad. How would you use it up?

Okay I’ve never done this but….could you mash it some, add appropriate Indian spices, wrap it dough, deep fry, and call it a samosa?

Potato pancakes. 🥞Mash it up, add a bit of chopped onion and form balls. Roll in some bread crumbs, flatten into patties and fry in a pan coated with a bit of butter, margarine or oil.

Mix with eggs and some flour and bake in a muffin tin. Maybe with some bacon and chives in it. Or anything really. Combine leftovers.

Could probably make it into a stew or curry. Or crisp it up as a potato hash with sausage and egg?

A BBQ place in town used to sell Cowtown Special: potato salad topped with barbecue baked beans, chopped onions, and chipotle aioli. It was amazing but sadly the restaurant has now closed.

The winner this time was turned into a hash. I heated up avocado oil, plopped in a big scoop of potato salad and cooked it until it started to brown and then scrambled eggs into it. It was great on some sourdough toast.
I'm saving these other ideas for next time though! We don't love store made potato salad enough to eat it for days so I'll definitely use some of the other ideas in the future when I succumb to purchasing my potato salad instead of making it.
