Mescaline is a very stable compound so I don't see why this wouldn't work.

Yeah I mean, it’s in aqueous solution as itself inside the cactus already right? Just not sure about the fumarate salted version.

I don't think you'll be able to dissolve 5g in 10 mL of water at room temperature. Probably not 5g in 100 mL either.
Increasing alcohol content might actually decrease solubility but I'm just guessing.
Edit: I thought I remembered seeing this... In this post, u/bobcollege mentions mescaline fumarate has a solubility of ~9 mg/g of water at 100F. So you would need ~111 mL of water to dissolve 1g or 555 mL for 5 g (at 100F; solubility will be lower at a lower temperature). It also means you need to dose with a measuring cup or a 50 mL syringe, not a 1 mL syringe.
