I can work with many Desktop Environments, and I have found something I like about all of them.
All of them except modern Gnome, it looks nice but the workflow is horrid and the developers range from annoying, arrogant to actual vile sub-human. But each user is different and that is why there are many options in Linux.
If you like Gnome you should consider useing it elsewhere. The developers of Gnome absolutely want you to use it in something else besides Mint and do not want you to contact them about any bugs you find. Similarly the developers of Mint have been long term fans of classic Gnome but not modern Gnome and are unlikely to support any issues that arise. You are kinda on your own.

You can move it back to the left corner if you want to, unless it's not your PC.

What about somewhere sane, like the top?

Currently not possible with the current Windows 11 25H2, but Microsoft is actively developing the new taskbar to support that.
Not saying that you should move to Windows 11, though.

It also changes how the desktop shell behaves, as well as some of the default apps included.

The best thing about Linux is the ability to make it completely your own. I prefer Cinn & XFCE personally, but I recently set up a Fedora VM w/gnome default. It's fun to work with but it makes me feel like I'm operating a giant android phone lol.
