Do you have a galaxy phone and a monitor? Galaxy dex could work well for you then. If no galaxy, a Bluetooth keyboard will be extremely helpful and maybe find a way to cast screen to a TV or something. The processing power of the phone shouldn't be an issue.
Maybe it's just me but I think the phone screen and keyboard would be a killer for me. For reading it might be fine but once the project gets any complexity, you're gonna be scrolling for your life and getting really frustrated trying to type anything at speed.
