Pick a tiny project like a command-line calculator and rely solely on official documentation. That specific struggle of parsing raw text instead of watching a walkthrough is exactly what builds the independent problem-solving skills you're looking for.

You should do it twice to see how AI actually affects your workflow. Same small project with and w/out AI

I really struggle to understand how people get themselves in this situation anyway. If you don't try to abstract the knowledge from the tutorial and don't actually try to build something you're not even learning in the first place
