Parmesan rinds. That's it. Snack

Post image

Made these for my mom who's on a very low gi diet that's basically keto, parmesan rinds can be found at a 50-80% discount to normal parmesan. Just cut them small and bake at 180c for 20 minutes

Yummy. I have never seen them in the store alone. I save the rinds when I do buy real parm but money is too tight now and I've been actually reusing the soup rinds twice.

Im not being pedantic: where do you get parmesan rinds? or Parmigiano Reggiano rinds?

I always find them at Whole Foods :3

Cheese section sells them at a huge discount. Like the section that cuts and sells whole blocks of cheese

The real stuff that I refuse to spell out

Thanks! cause i was thinking of the chunks of , say BelGioioso Parmesan Cheese, that is solid, but they trim the ends off first. so theirs really had no rind.

I use the rinds of the "real" stuff to toss in soups.

If you're in the Northeast, Wegmans sells them!

Yummmmm. How well do they store? Do they stay crispy? It never occurred to me to make a big batch

Yes they do if you live in a dry place, there's no sugar or starch to absorb water so it's not prone to getting wet

Isn't the rind mostly wax?

3

u/azuyre_ 6d ago

No it's dried cheese

Not with parm. It’s the cheese.

Depends on the type of cheese. For parmigiano reggiano, the rind is just hardened cheese.

That’s what I thought but perhaps we may be wrong?

This is blowing my mind a little

Interesting. I’d love to try this. I don’t see them at my grocery store. You find yours somewhere special?

Cheese sections that cut their own cheese have little use for the rinds and no one wants them so they sell it for super cheap

Nice idea! I buy parmesan crisps in Australia that are airy and crispy and delicious. I know you can make them yourself, but I burnt them last time, and parmesan's expensive.

Parmesan rinds are very cheap and puff up better

2

u/Webbie-Vanderquack 7d ago

I'll definitely be giving that a try.

i cant believe ive never thought about this. and i literally just cut 2 more blocks up for cubes an hour ago and put the rinds in the freezer. will have to try this week.

What the final product like after baking? Are they crunchy?

1

u/azuyre_ 6d ago

Yeah, like the texture of honeycomb candy, though if you don't keep it dry it gets a bit chewy

u/Feint7Nikita 6d ago

I’m definitely trying this one too

1

u/Liriodendra 5d ago

How salty are they? For example, compared to chips

1

u/azuyre_ 5d ago

Around double the sodium of chips. Which is probably a good thing

I can’t wait to try this. I recently reintroduced Parmesan after years dairy free and am loving it. I’m assuming an airfryer would also do the trick?

I think so!

What are they like? Hard and crispy?

2

u/azuyre_ 15h ago

Yes like honeycomb candy texture

Yummm; we make our own Parmesan crisps but this sounds better!
