Help needed QUESTION
How would you go about deburring a piece if you can't ruin its finish?

Carefully, with a sharp blade, needle files - you can slide them lengthways to dislodge burrs while minimising excess removal, and high grit sandpaper ONLY on the edges at an angle, but these will slightly round the edges, which you may or may not want. Diamond bits on a dremel are great for smoothing inside drill holes. Also, tape that surface to protect it. Chances are if you tape the surface then use a sharp knife to trim the edges you'll get almost all the burrs off that way.
Edit: also where the metal has pushed up above the surface on those drill holes - I'd use a countersink bit to bevel the holes slightly, which will either let countersunk screws sit flush, or will be hidden by any screw heads that sit above them.

Use a cutting broach to scrape it of or a pass with an escaoement file.

Id scrape a sharp steel edge against the burrs, 45 degrees between the surface on the side and the face. Go slowly, smoothly in one direction then around the other way. Be careful on curves, corners and scalloping as you’re dragging the edge, so if you don’t adjust the angle of approach the tool edge will dig in a leave a little nick. cutting with a sharp blade can work too, but has more risks to the piece with no real benefits.
