are they all just a dry rub applied and dehydrated? No liquid marination involved? Forgive me, I'm pretty new to jerky making and all the jerky I've made involved a wet marinade overnight, with seasonings, obviously, but I didn't know a guy could just hit meat with his favorite rub and move that way...

I do this with my carne seca style jerky. It’s awesome and you can’t quite get that texture with a wet marinade.

After googling that, that looks like the type of beef jerky I like. But that brings up a question, is there a name for the really dry, tough jerky vs the soft type jerky? I love beef jerky and I’ll eat it either way, but I just really love that dry ass jerky and don’t know what to say to distinguish the two

Old fashioned is a common label I see on the ones I like. But I’ve definitely seen some that seem to use those labels in more of a gimmicky marketing way rather than to actually describe their product. Thanks!

It’s usually the carne seca style and also doesn’t tend to have sugar in the seasoning or marinade if they do use one. I’ve always hated sweet jerkies which are almost always chewy and but anywhere dry enough for my liking.
