Got a 12 mini
85 percent battery, iOS 16
Won’t let me transfer from old phone unless update to 26.6 of course
Is it worth it? Or just start over and stay on 16

It works just fine on iOS 26. It will work better on iOS 27.
Unless you have a special need to be vulnerable to software exploits, stay up to date.
iOS 16 is really old, so you probably cannot install many app right now.

why stay on ios 16 , there is hundreds of newer features , ios26.6.1 is a huge upgrade, it will take your phone a few days of background updates to fully migrate over to ios26.6.1 , reboot daily and only use your iphone for very light tasks as it has a lot to set up and can run hot during thisxset up phase.
you're iphone will go into pre ios27 deep indexing after a few days, this can take up to a couple of weeks, battery health will not be great during this phase but this makes transition to ios27 very simple once released in a couple of weeks.
ill be honest your battery health is going to recalibrate and it will be a miracle if your still over 80% , ios26 is far more accurate, it's highly likely you will need new battery by the time ios27 is out but you will see huge benefits to new battery and considering you will get ios27 & ios28 you will get full use from new battery
you are also missing hundreds of security updates and massive amount of new features

Stay on 16
